Rice cooking steps and tips
1. Weigh the rice
Use a measuring cup made for rice to measure accurately. If you don't have a measuring cup, use a scale. One cup of rice is roughly 150g and one cup of water is roughly 200ml.
2. Wash the rice
Discard the first water as quickly as possible. Rinse quickly 5 to 6 times until the water runs clear.
3. Water amount
The basic rule is to use about 1.1 times the amount of rice. If you use new or old rice, you will need to adjust the amount of water accordingly. (Example) For 2 cups of rice (360cc or 300g), use 2 cups (400ml) of water.
4. Flooding time
Before cooking, let the rice soak up enough water. A good rule of thumb is 30 minutes in summer and 1 hour in winter.
5. Heat control
Bring to a boil over medium heat, then reduce heat and simmer for about 10 minutes, then turn off the heat.
6. Steaming
Steam for about 10 to 15 minutes. If the steaming time is too short, the rice will remain hard-core, and if it is too long, the rice will be sticky.
7. Loosen up
Use a rice spoon to gently loosen the rice by turning it over from the bottom to remove excess water.
Caution: When holding down the handle of a pot, be sure to use a metal brace or similar. The pot and handle will be very hot immediately after cooking and you may get burned.
8. Presentation
Arrange the rice generously, being careful not to crush the grains.
9. Save
Transfer to another container and cover with a dry cloth.
